Ingredients
  

For the marinade

  • 1 block Super Firm Tofu (vacuum-sealed for best results) Press for 15-30 minutes to remove excess moisture.
  • ½ cup Vegan Yogurt (Unsweetened) or cashew cream/coconut yogurt
  • 2 tablespoons Dijon Mustard or any mustard
  • 2 tablespoons Agave or Sugar, Syrup (maple syrup/brown sugar)
  • 2 tablespoons Lemon Juice & Zest (or lime juice)
  • 3 tablespoons Olive Oil or Neutral Flavored Oil (like avocado oil)
  • 3 tablespoons Soy Sauce or tamari for gluten-free
  • 2 cloves Minced Garlic or garlic powder
  • 2 tablespoons Nutritional Yeast or vegan parmesan
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Onion Powder
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Thyme

For serving

  • 4 slices Pita Bread (whole wheat or gluten-free options)
  • 1 cup Vegan Tzatziki For serving.

Instructions
 

Preparation

  • Press the tofu for about 15 to 30 minutes to remove excess moisture.
  • In a bowl, mix together the vegan yogurt, Dijon mustard, agave, lemon juice and zest, olive oil, soy sauce, minced garlic, nutritional yeast, smoked paprika, onion powder, oregano, and thyme.
  • Cut the pressed tofu into cubes and add it to the marinade. Ensure all pieces are coated well and let it marinate for at least 30 minutes.

Cooking

  • Preheat your grill or oven to medium-high heat. If using a grill, thread the marinated tofu onto skewers.
  • Grill or bake the tofu for about 10-15 minutes, turning halfway, until golden and slightly crispy.
  • Warm the pita bread in a pan or oven for a few minutes.

Serving

  • Serve your Tofu Souvlaki in warm pita bread with fresh vegetables like lettuce, tomatoes, or onions on top and drizzle with vegan tzatziki.

Notes

Use super firm tofu for the best texture. Allow tofu to marinate longer for deeper flavor—up to overnight if possible. Feel free to mix in veggies like bell peppers and onions on skewers.
