Easy Parmesan Chicken Pasta

This creamy Parmesan Chicken Pasta is the perfect one-pot dinner! It’s quick, comforting, and loaded with flavor thanks to garlic, Italian seasoning, and a velvety parmesan cream sauce — ready in just 30 minutes.

Ingredients
  

  • 1 lb chicken breasts (boneless, skinless, cut into chunks)
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 2 cups milk (whole preferred)
  • 8 oz penne pasta (or other short pasta)
  • 1 tsp Italian seasoning
  • 1 cup grated parmesan cheese
  • 1 tbsp butter
  • to taste salt and pepper
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp chopped parsley (for garnish)

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add chicken pieces and season with salt and pepper. Cook until golden and cooked through, about 5-6 minutes. Remove from skillet and set aside.
  2. In the same skillet, add a bit more oil if needed. Sauté the chopped onion for 2-3 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
  3. Pour in the chicken broth and milk. Stir in the pasta, Italian seasoning, and red pepper flakes (if using). Bring to a boil, then reduce heat and simmer uncovered for 10-12 minutes or until pasta is cooked, stirring occasionally.
  4. Once the pasta is tender and most of the liquid is absorbed, reduce heat to low. Stir in parmesan cheese, butter, and cooked chicken. Mix until cheese is melted and sauce is creamy.
  5. Garnish with chopped parsley and serve hot. Enjoy your creamy parmesan chicken pasta!

Notes

Use rotisserie chicken for an even faster dinner. You can swap penne for any short pasta like fusilli or rigatoni. Add spinach or mushrooms to boost the veggies. Adjust red pepper flakes for desired heat.
