- Heat olive oil in a large skillet over medium heat. Add chicken pieces and season with salt and pepper. Cook until golden and cooked through, about 5-6 minutes. Remove from skillet and set aside.
- In the same skillet, add a bit more oil if needed. Sauté the chopped onion for 2-3 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
- Pour in the chicken broth and milk. Stir in the pasta, Italian seasoning, and red pepper flakes (if using). Bring to a boil, then reduce heat and simmer uncovered for 10-12 minutes or until pasta is cooked, stirring occasionally.
- Once the pasta is tender and most of the liquid is absorbed, reduce heat to low. Stir in parmesan cheese, butter, and cooked chicken. Mix until cheese is melted and sauce is creamy.
- Garnish with chopped parsley and serve hot. Enjoy your creamy parmesan chicken pasta!
Notes
Use rotisserie chicken for an even faster dinner. You can swap penne for any short pasta like fusilli or rigatoni. Add spinach or mushrooms to boost the veggies. Adjust red pepper flakes for desired heat.
