- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, combine the milk, egg, and melted butter.
Cooking
- Pour the wet ingredients into the dry ingredients and stir until just combined (do not overmix).
- Heat a non-stick skillet over medium heat and grease it with cooking spray or butter.
- Pour 1/4 cup of batter for each pancake onto the skillet.
- Cook until bubbles form on the surface and edges appear set, about 2-3 minutes.
- Flip and cook for another 2-3 minutes or until golden brown.
- Serve warm with your favorite toppings.
Notes
Do not overmix the batter; small lumps are fine. Use medium heat so pancakes cook through without burning. Let batter rest 5 minutes for better texture. Use a measuring cup to pour equal pancakes.
