Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons butter, melted
For Cooking
  • as needed Cooking spray or additional butter for the skillet

Method
 

Preparation
  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, combine the milk, egg, and melted butter.
Cooking
  1. Pour the wet ingredients into the dry ingredients and stir until just combined (do not overmix).
  2. Heat a non-stick skillet over medium heat and grease it with cooking spray or butter.
  3. Pour 1/4 cup of batter for each pancake onto the skillet.
  4. Cook until bubbles form on the surface and edges appear set, about 2-3 minutes.
  5. Flip and cook for another 2-3 minutes or until golden brown.
  6. Serve warm with your favorite toppings.

Notes

Do not overmix the batter; small lumps are fine. Use medium heat so pancakes cook through without burning. Let batter rest 5 minutes for better texture. Use a measuring cup to pour equal pancakes.
