Ingredients

  • 1.5 lbs Chicken breasts or thighs Cut into even pieces for uniform cooking.
  • 3 cups Chicken broth
  • 1 cup Greek yogurt
  • 1 Cucumber grated
  • 2 cloves Garlic minced
  • 2 tbsp Fresh dill
  • 2 tbsp Lemon juice
  • 1 cup Rice Spread evenly in the casserole dish.

Preparation

  • Preheat your oven to 375°F and grease a casserole dish.
  • Spread the rice evenly in the bottom of the dish.
  • Add the chicken on top of the rice and season with salt and pepper to taste.
  • In a bowl, mix the Greek yogurt, grated cucumber, minced garlic, fresh dill, and lemon juice to make the tzatziki sauce.
  • Spoon the tzatziki sauce over the chicken.
  • Pour the chicken broth over everything and cover the dish with foil.

Cooking

  • Bake in the oven for 45-50 minutes, or until the chicken is fully cooked and the rice is fluffy.

Serving

  • Serve hot right from the oven, preferably with a side salad or warm pita bread.
  • Drizzle extra tzatziki sauce on top before serving for added flavor.

Notes

To store leftovers, let the dish cool completely, then place in an airtight container in the refrigerator for 3-4 days. Reheat in the microwave or oven before serving. For variations, use grilled shrimp or turkey instead of chicken, or switch to brown rice for a healthier option.
