  • 1.5 lbs Chicken breasts or thighs Cut into even pieces for uniform cooking.
  • 3 cups Chicken broth
  • 1 cup Greek yogurt
  • 1 Cucumber grated
  • 2 cloves Garlic minced
  • 2 tbsp Fresh dill
  • 2 tbsp Lemon juice
  • 1 cup Rice Spread evenly in the casserole dish.

Method
 

Preparation
  1. Preheat your oven to 375°F and grease a casserole dish.
  2. Spread the rice evenly in the bottom of the dish.
  3. Add the chicken on top of the rice and season with salt and pepper to taste.
  4. In a bowl, mix the Greek yogurt, grated cucumber, minced garlic, fresh dill, and lemon juice to make the tzatziki sauce.
  5. Spoon the tzatziki sauce over the chicken.
  6. Pour the chicken broth over everything and cover the dish with foil.
Cooking
  1. Bake in the oven for 45-50 minutes, or until the chicken is fully cooked and the rice is fluffy.
Serving
  1. Serve hot right from the oven, preferably with a side salad or warm pita bread.
  2. Drizzle extra tzatziki sauce on top before serving for added flavor.

Notes

To store leftovers, let the dish cool completely, then place in an airtight container in the refrigerator for 3-4 days. Reheat in the microwave or oven before serving. For variations, use grilled shrimp or turkey instead of chicken, or switch to brown rice for a healthier option.
