  • 1 cup crunchy dill pickles, sliced You can substitute with bread-and-butter pickles for a sweeter taste.
  • 1 cup freshly grated Parmesan cheese Can be substituted with mozzarella or cheddar cheese.
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • to taste Salt and pepper Avoid over-salting as pickles add saltiness.
  • 1/2 cup Greek yogurt Can be replaced with sour cream or regular yogurt.
  • 1 tbsp lemon juice

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare a baking dish by spraying it with nonstick spray.
  2. Season each chicken breast generously with salt, pepper, and garlic powder. Let the chicken sit for a few minutes to absorb the flavors.
  3. Layer the sliced dill pickles on top of each seasoned chicken breast.
  4. Generously sprinkle the grated Parmesan cheese over the pickles, ensuring each piece of chicken is well-covered.
Cooking
  1. Place the baking dish in the oven and bake for 25-30 minutes. The chicken is done when it reaches an internal temperature of 165°F (75°C) and the cheese is golden brown.
Finishing Touch
  1. While the chicken is baking, mix the Greek yogurt and lemon juice in a small bowl to create a creamy sauce.
  2. Once baked, serve the chicken drizzled with the lemon Greek yogurt sauce for an added burst of flavor.

Notes

Serve with a side of roasted vegetables, salad, rice, or mashed potatoes. For best results, check the chicken’s doneness with a meat thermometer. Store leftovers in an airtight container in the refrigerator for 3-4 days.
