Equipment

  • Wire Rack
  • Baking Sheet
  • Mixing Bowl
  • Oven

Ingredients

Chicken Wings

  • 2 pounds chicken wings drumettes and flats separated
  • 1 tbsp baking powder aluminum-free
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp paprika optional for color
  • 1 tbsp olive oil light coating

Instructions

  • Preheat the oven to 425°F (220°C) and place a wire rack on a foil-lined baking sheet.
  • Pat the chicken wings dry with paper towels. For best results, let them air-dry uncovered in the fridge for 1 hour.
  • In a large bowl, toss wings with baking powder, salt, garlic powder, and paprika until evenly coated.
  • Drizzle with olive oil and mix gently.
  • Arrange wings on the rack in a single layer without touching.
  • Bake for 20 minutes, flip each wing, then bake another 25 minutes until golden and crispy.
  • Broil for 3–5 minutes for extra crispiness, if desired.
  • Serve immediately with your favorite dipping sauces.

Notes

For best results, use a wire rack to allow air circulation. Avoid overcrowding the tray. If storing, reheat wings in the oven or air fryer to regain crispiness.
