  • 8 oz pasta (penne or fettuccine) Any shape can be used.
Main Ingredients
  • 1 lb chicken breast, sliced Can substitute with shrimp or sausage.
  • 2 tablespoons Cajun seasoning Adjust to taste for spice level.
  • 2 tablespoons olive oil For cooking the chicken.
  • 1 cup heavy cream Can substitute with half-and-half or non-dairy options.
  • 1 cup chicken broth
  • 1 cup bell peppers, sliced Use any preferred color.
  • 1/2 cup onion, diced Sweet or yellow onion works well.
  • 1 cup grated Parmesan cheese For flavor and creaminess.
  • to taste Salt and pepper For seasoning.
  • as needed Chopped parsley for garnish Optional for serving.

Method
 

Preparation
  1. Cook the pasta according to the package instructions. Drain it and set it aside.
Cooking
  1. In a skillet, heat the olive oil over medium heat.
  2. Add the sliced chicken and sprinkle the Cajun seasoning. Cook the chicken until it is browned and cooked through, about 5-7 minutes.
  3. Add the diced onion and sliced bell peppers to the skillet. Cook until the vegetables are softened, approximately 3-4 minutes.
  4. Pour in the chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.
  5. Add the cooked pasta and Parmesan cheese to the skillet. Stir until the cheese melts and everything is well combined. Season with salt and pepper to taste.
  6. Serve hot, garnished with chopped parsley.

Notes

For best results, serve immediately. Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet with additional chicken broth if needed.
