Preparation

  • Start by boiling a large pot of salted water and cook your pasta according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium-high heat. Season the chicken breasts with Cajun seasoning, salt, and pepper.
  • Add the chicken to the skillet and cook for about 6-7 minutes on each side or until the center is no longer pink. Remove the chicken from the skillet and let it rest for 5 minutes before slicing it thinly.
  • In the same skillet, add the unsalted butter and minced garlic. Sauté for about 1 minute until fragrant.
  • Stir in Cajun seasoning and smoked paprika, cooking for about 30 seconds.
  • Next, add the chicken broth and let it simmer for 2-3 minutes. Pour in the heavy cream, stirring to combine.
  • Let the sauce simmer gently, allowing it to thicken slightly.
  • Add the cooked pasta and sliced chicken to the skillet, stirring well to coat everything in the creamy sauce.
  • Fold in the grated Parmesan cheese and continue to cook for an additional 2-3 minutes, adjusting with more chicken broth for desired consistency.
  • Season with extra salt and pepper as needed.
