Preparation
- Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
- In a large bowl, combine the sliced apples with 1/2 cup of sugar and set aside.
Mixing Dry Ingredients
- In another bowl, whisk together the flour, baking powder, salt, and cinnamon.
Mixing Wet Ingredients
- In a separate bowl, beat the eggs with the remaining 1/2 cup of sugar, melted butter, and vanilla extract.
Combining Ingredients
- Combine the wet and dry ingredients until just mixed. Do not overmix.
- Fold in the sugared apples.
Baking
- Pour the batter into the prepared cake pan.
- Bake for 40–45 minutes or until a toothpick comes out clean.
- Allow to cool slightly before serving.
Notes
Serve warm or at room temperature. Pairs well with vanilla ice cream, whipped cream, or a simple custard. Store in an airtight container for up to 4 days in the fridge or freeze for up to 2 months.
