Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a large bowl, combine the sliced apples with 1/2 cup of sugar and set aside.
Mixing Dry Ingredients
  1. In another bowl, whisk together the flour, baking powder, salt, and cinnamon.
Mixing Wet Ingredients
  1. In a separate bowl, beat the eggs with the remaining 1/2 cup of sugar, melted butter, and vanilla extract.
Combining Ingredients
  1. Combine the wet and dry ingredients until just mixed. Do not overmix.
  2. Fold in the sugared apples.
Baking
