  • 12 pieces Potstickers (homemade or frozen)
  • 4 cups Chicken or Vegetable Broth Use good quality broth for more flavor.
  • 1 tablespoon Fresh Ginger (minced)
  • 3 cloves Garlic (minced)
  • 1 can Coconut Milk Makes the soup creamy and dairy-free.
  • 2 tablespoons Soy Sauce
  • 2 tablespoons Fresh Lime Juice
  • 1/4 cup Cilantro (chopped) Garnish for serving.
  • 1/4 cup Green Onions (sliced) Garnish for serving.

Method
 

Preparation
  1. Heat a pot on medium. Add a little oil if desired. Add ginger and garlic. Cook for 1 minute until fragrant.
  2. Pour in the broth and coconut milk. Stir to mix.
  3. Add soy sauce and bring the soup to a gentle boil.
  4. Add the potstickers. If frozen, cook until heated through; if fresh, cook for 4–6 minutes until done.
  5. Turn off the heat. Stir in lime juice, cilantro, and green onions. Taste and adjust seasoning if necessary.
Serving
  1. Serve the soup in deep bowls. Top with extra cilantro or green onions and a squeeze of lime if desired.

Notes

Let the soup cool before storing in an airtight container. It keeps in the fridge for up to 3 days and can be reheated on the stove. Do not refreeze potstickers after they have been cooked.
