  • 12 slices slices of white bread (soft sandwich bread, brioche, or challah) Use any type of soft bread, avoid crusty breads.
  • 3 tbsp butter, softened Plus more for cooking.
  • ΒΌ cup light brown sugar Can substitute with coconut sugar or honey.
  • 1 tsp cinnamon For the filling.
  • 2 large eggs For the egg mixture.
  • 3 tbsp milk Can use non-dairy milk like almond or oat milk.
  • 3 tbsp granulated sugar For coating.
  • 1 tsp cinnamon For coating.
  • optional Powdered sugar For serving.

Instructions
 

Preparation

  • Using a rolling pin or your hands, gently flatten each slice of bread.
  • In a small bowl, mix the softened butter, light brown sugar, and cinnamon together until smooth to create the filling.
  • Spread a thin layer of the cinnamon filling on each slice of flattened bread. Roll each slice tightly into a log and set aside.
  • In another bowl, whisk together the eggs and milk to create your French toast batter.

Cooking

  • Heat a nonstick skillet over medium heat and melt a little butter in the pan.
  • Dip each roll-up into the egg mixture, ensuring it's fully coated but not soaked.
  • Place the roll-ups in the skillet and cook for 2-3 minutes per side, turning often, until they are golden brown and crispy.
  • While the roll-ups are still warm, roll them in a mixture of granulated sugar and cinnamon.
  • Dust the roll-ups with powdered sugar, drizzle with maple syrup, or dip them in a cream cheese glaze for presentation.

Notes

For best results, avoid overcrowding the skillet and ensure even cooking. Leftovers can be stored in an airtight container for up to 2 days.
