Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the flour, baking powder, salt, and ground cinnamon until well combined.
- In another bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy and light in color.
- Beat in the egg and vanilla extract into the butter-sugar mixture until smooth and creamy.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
- In a small bowl, combine the brown sugar and ground cinnamon for the filling.
- Spread half of the cookie dough on a piece of parchment paper in a rectangular shape and evenly sprinkle half of the filling over it.
- Roll the dough tightly into a log shape using the parchment paper and slice the log into rounds, about 1-inch thick.
- Place the slices on the prepared baking sheet.
Baking
- Bake in the preheated oven for 10-12 minutes or until golden brown. Allow to cool slightly before serving.
Notes
For best results, make sure butter is softened, not melted, and avoid overbaking for a soft center. You can drizzle a simple icing made of powdered sugar, milk, and vanilla on top after baking.
