Ingredients
  

For the Salad

  • 7 cups mixed spring greens Rinsed and dried
  • 1 ¼ cups orange segments (mandarin, clementine, or tangerine)
  • ½ cup pomegranate seeds (or dried cranberries)
  • ½ cup crumbled feta cheese Can substitute with goat cheese
  • ½ cup candied pecans, roughly chopped For nut-free version, replace with sunflower seeds

For the Dressing

  • cup olive oil
  • 1 tablespoon honey Can be omitted for vegan
  • 2 teaspoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon minced shallot
  • to taste Salt and pepper

Instructions
 

Preparation

  • Gather all the salad ingredients.
  • Rinse the mixed greens under cold water, then dry them in a salad spinner or gently pat them dry with paper towels.

Assembly

  • In a large bowl, add the mixed spring greens.
  • Add the orange segments, pomegranate seeds (or dried cranberries), crumbled feta cheese, and chopped candied pecans.

Dressing Preparation

  • In a small bowl, whisk together the olive oil, honey, Dijon mustard, apple cider vinegar, minced shallot, and salt and pepper until smooth.

Final Mixing

  • Drizzle the dressing over the salad ingredients to your taste.
  • Toss gently to coat all the ingredients evenly.

Serving

  • Serve the Christmas Salad immediately to enjoy its freshness and vibrant flavors!

Notes

Ensure your salad greens are chilled before serving for a refreshing crunch. Wait until just before serving to add the dressing to prevent the greens from wilting. Avoid using overly ripe oranges as they may affect the texture.
