  • 6 pieces thin-sliced chicken breasts Ensure they are thinly sliced for even cooking
  • 1 small bag fresh baby spinach
  • 1/4 cup olive oil
  • 1/2 cup chicken broth
  • 1 large package sliced mushrooms Layer at the bottom of the baking dish
  • 8 oz shredded mozzarella cheese For topping
  • 1 container green onion cream cheese Spread over the chicken
  • 1 dash pepper To taste
  • 1 dash Herb and Garlic Seasoning To taste

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the chicken breasts, olive oil, pepper, and herb and garlic seasoning. Toss to coat the chicken evenly.
Assembly
  1. In a greased baking dish, layer the bottom with sliced mushrooms.
  2. Place the seasoned chicken breasts on top of the mushrooms.
  3. Spread the cream cheese over the chicken breasts, followed by the spinach.
  4. Pour chicken broth around the edges of the dish and top with shredded mozzarella cheese.
Cooking
  1. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the cheese is bubbly and golden.
  2. Remove from the oven, let cool slightly, and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat before serving. For a lighter meal, serve on its own or with a simple green salad. You can also pair with cauliflower rice or zoodles for a complete low-carb option. To add variety, try different vegetables or cheeses.
