Preparation
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the chicken breasts, olive oil, pepper, and herb and garlic seasoning. Toss to coat the chicken evenly.
Assembly
- In a greased baking dish, layer the bottom with sliced mushrooms.
- Place the seasoned chicken breasts on top of the mushrooms.
- Spread the cream cheese over the chicken breasts, followed by the spinach.
- Pour chicken broth around the edges of the dish and top with shredded mozzarella cheese.
Cooking
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the cheese is bubbly and golden.
- Remove from the oven, let cool slightly, and serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat before serving. For a lighter meal, serve on its own or with a simple green salad. You can also pair with cauliflower rice or zoodles for a complete low-carb option. To add variety, try different vegetables or cheeses.
