- In a large skillet, heat the olive oil over medium heat.
- Add the sliced chicken sausages and cook until browned.
- Stir in the broccoli florets and cook for 2-3 minutes until tender.
- Add the orzo pasta and chicken broth to the skillet.
- Bring the mixture to a boil, then lower the heat, cover, and let simmer for 10-12 minutes.
- Season with salt and pepper to taste and serve warm, topped with grated Parmesan if desired.
Notes
For storage, allow to cool completely before placing in an airtight container. Can be refrigerated for up to 3 days. Reheat with a splash of chicken broth.
