Chicken Kofta Garlic Yogurt Sauce

This simple recipe makes soft grilled koftas from ground chicken, paired with a fresh and cool garlic yogurt sauce.

Ingredients
  

For the Koftas

  • 500 grams ground chicken Keep ground chicken light for softer koftas.
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • ¼ cup fresh parsley, finely chopped Use fresh parsley for best flavor.
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons olive oil For brushing the grill.

For the Garlic Yogurt Sauce

  • 1 cup plain yogurt Greek yogurt can be used for a thicker sauce.
  • 2 tablespoons freshly squeezed lemon juice Adds freshness to the sauce.
  • 1 pinch salt

Instructions
 

Preparation

  • In a large bowl, combine ground chicken, chopped onion, minced garlic, parsley, cumin, coriander, salt, and black pepper. Mix well.
  • Form the mixture into small oval-shaped koftas.
  • Chill the kofta mix for 15 minutes if it feels too soft before shaping.

Grilling

  • Preheat the grill and brush it with olive oil.
  • Grill the koftas for about 10-12 minutes, turning occasionally until cooked through.

Making the Sauce

  • In a separate bowl, mix yogurt, lemon juice, and a pinch of salt to prepare the garlic yogurt sauce.

Serving

  • Serve the grilled koftas hot with a spoon of garlic yogurt sauce on top or on the side.

Notes

Serve koftas with flatbread, rice, or salad. To store, refrigerate koftas for up to 3 days and yogurt sauce for up to 2 days. Do not freeze yogurt sauce; make fresh if needed after freezing koftas.
