  • 2 cups cooked rice Day-old rice works best.
  • 1 lb chicken breast, diced
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 onion diced
  • 1 packet fajita seasoning
  • 1 cup shredded cheese Use your preferred type of cheese.
  • 1 cup chicken broth
  • to taste Salt and pepper Season to taste.

Preparation

  • Preheat the oven to 375°F (190°C).
  • Cook the diced chicken in a skillet over medium heat until it is fully cooked. Season lightly with salt and pepper.
  • Add the sliced bell peppers and onion to the skillet. Cook until the vegetables are soft.
  • Stir in the fajita seasoning and the chicken broth. Bring the mix to a gentle simmer.
  • In a large bowl, mix the cooked rice with the chicken and vegetable mixture.
  • Grease a baking dish and transfer the rice and chicken mix into it. Spread it evenly.
  • Sprinkle the shredded cheese on top.
  • Bake for 20-25 minutes, until the cheese is melted and bubbly.
  • Let it sit for a few minutes, then serve hot.

Notes

Serve warm from the oven with fresh toppings like cilantro or green onions, and sides like sour cream or salsa.
