Cookie Base

  • 1 cup unsalted butter, softened Alternatively, use salted butter and reduce added salt.
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour For a healthier option, substitute half with whole wheat flour.
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup caramel bits or chopped caramel candies
  • 1 cup chocolate chips Optional, can be replaced with white chocolate chips.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  • Beat in eggs one at a time, then stir in the vanilla extract.
  • In another bowl, combine the all-purpose flour, baking soda, and salt.
  • Gradually blend the dry mixture into the creamed mixture until just combined.
  • Gently fold in the caramel bits and chocolate chips.
  • Using rounded tablespoons, drop the dough onto ungreased cookie sheets.
  • Bake in the preheated oven for 10-12 minutes, until the edges are golden brown and centers are chewy.
  • Allow to cool for a few minutes on sheets before transferring to wire racks.

Notes

For softer cookies, consider underbaking a minute or two and allowing to cool on the baking sheet. Store in an airtight container at room temperature for up to a week, or freeze for up to three months.
