Preparation
- Preheat the oven and cook the frozen tater tots according to the package instructions until golden and crispy.
- In a skillet over medium heat, brown the ground beef. Season with salt and pepper to taste and cook thoroughly. Drain any excess grease.
- In a large mixing bowl, combine the cooked ground beef, crispy tater tots (slightly crushed), shredded cheddar cheese, and shredded monterey jack cheese. Mix well.
- Warm the flour tortillas in a dry skillet or microwave them for 10-15 seconds to make them pliable.
Assembly
- Spoon a generous amount of the filling mixture onto the center of each tortilla. Drizzle with chipotle sauce and add a dollop of sour cream.
- Fold the sides of the tortilla over the filling, then fold the bottom up and roll tightly to form a burrito.
- Place the burritos seam side down in a baking dish and sprinkle additional shredded cheese over the top.
Cooking
- Bake in a preheated oven for 5-7 minutes until the cheese melts and bubbles.
Serving
- Remove burritos from the oven and garnish with diced tomatoes, chopped green onions, and cilantro as desired. Serve hot with extra sour cream and chipotle sauce.
Notes
For best results, warm the tortillas before rolling and slightly crush the tater tots. Drain excess grease from cooked beef for a healthier burrito. Adjust chipotle sauce based on spice preference. Can be made vegetarian or with variations.
