  • 1 pound ground beef or substitute with ground turkey or plant-based alternative
  • 2 cups frozen tater tots should crisp well for good texture
  • 1 cup shredded cheddar cheese for added flavor and melty texture
  • 1 cup shredded monterey jack cheese
  • ½ cup sour cream for creaminess
  • ¼ cup Taco Bell chipotle sauce adjust to taste
  • 6 large flour tortilla wraps
  • Salt and pepper to taste
  • Diced tomatoes for garnish
  • Chopped green onions for garnish
  • Cilantro for garnish

Preparation

  • Preheat the oven and cook the frozen tater tots according to the package instructions until golden and crispy.
  • In a skillet over medium heat, brown the ground beef. Season with salt and pepper to taste. Cook thoroughly until no longer pink, then drain any excess grease.
  • In a large mixing bowl, combine the cooked ground beef, crispy tater tots (slightly crushed), shredded cheddar cheese, and shredded monterey jack cheese. Mix thoroughly.
  • Warm the flour tortillas in a dry skillet or microwave them for 10-15 seconds to make them pliable.

Assembly

  • Spoon a generous amount of the filling mixture onto the center of each tortilla. Drizzle each with Taco Bell chipotle sauce, then add a dollop of sour cream.
  • Fold the sides of the tortilla over the filling, then fold the bottom up and roll tightly to form a burrito.

Baking

  • Place the burritos seam side down in a baking dish. Sprinkle additional shredded cheese over the top. Bake in a preheated oven for 5-7 minutes until the cheese melts and bubbles.

Serving

  • Remove the burritos from the oven and garnish with optional diced tomatoes, chopped green onions, and cilantro. Serve hot with extra sour cream and chipotle sauce on the side.

Notes

Store leftover burritos by letting them cool to room temperature, wrapping them in foil or plastic wrap, and placing them in an airtight container. They can be kept in the fridge for up to 3-4 days or frozen for up to 2 months.
