  • 1/4 cup All-Purpose Flour Cornstarch is a gluten-free alternative
  • 4 cups Chicken Broth Vegetable broth is a vegetarian swap
  • 1 cup Heavy Cream Half and half or whole milk can be used
  • Salt to taste Salt
  • Pepper to taste Pepper
  • 1 teaspoon Italian Seasoning Adjust to taste
  • 1 teaspoon Paprika Adjust to taste
  • 1 cup Matchstick Carrots Fresh or frozen
  • 1 1/2 cups Uncooked Macaroni Noodles Any small pasta shape can be used
  • 1 cup Shredded Cheddar Cheese Consider mixing different cheese varieties
  • 1/2 cup Shredded Parmesan Cheese Pecorino Romano is a flavorful substitute

Method
 

Cooking
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic. Sauté until the onion becomes translucent, about 3 to 4 minutes.
  3. Add the ground beef, cooking until browned and fully cooked, breaking it apart as you stir.
  4. Sprinkle the flour over the meat and mix well, cooking for another 2 minutes.
  5. Slowly pour in the chicken broth, stirring constantly to avoid lumps.
  6. Add the heavy cream, salt, pepper, onion powder, Italian seasoning, and paprika. Stir to combine.
  7. Bring the soup to a gentle boil, then reduce the heat.
  8. Stir in the matchstick carrots and uncooked macaroni. Cook until the pasta is tender, about 8 to 10 minutes.
  9. Once cooked, stir in shredded cheddar and parmesan until melted and creamy.

Notes

Serve hot in bowls, garnished with extra cheese or parsley if desired. Pairs wonderfully with crusty bread or a simple side salad. For added flavor, top each bowl with crispy bacon bits or fresh herbs.
