Ingredients
  

For the crust

  • 2 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted
  • 0.25 cups sugar

For the cheesecake filling

  • 2 packages (8 oz) cream cheese, softened
  • 1 cups sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups apples, peeled and diced
  • 1 cup caramel sauce
  • 1 teaspoon cinnamon

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan.
  • In a mixing bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup of sugar. Stir until well blended.
  • Press the mixture firmly into the bottom of the prepared pan to create an even crust.

Cheesecake Filling

  • In a separate bowl, beat the softened cream cheese, 1 cup of sugar, and vanilla extract until the mixture is smooth and creamy.
  • Add the eggs one at a time, mixing well after each addition until fully incorporated.

Combine Ingredients

  • Fold in the diced apples and cinnamon into the cheesecake mixture gently to combine.
  • Pour the cheesecake mixture over the crust layer in the pan.
  • Drizzle the caramel sauce on top and use a knife to swirl it into the batter lightly.

Baking

  • Bake for 30-35 minutes or until the filling is set but still slightly jiggly in the center.
  • Let the bars cool completely at room temperature.
  • Refrigerate for at least 2 hours before cutting into bars to help them set further.

Notes

Make sure the cream cheese is softened for easy mixing. Check the bars around the 30-minute mark to avoid a rubbery texture. Allow the bars to cool fully before cutting them for clean squares.
