Base Ingredients

  • 1 head cabbage, chopped Cabbage is known for its fat-burning properties.
  • 1 large onion, chopped
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 1 medium bell pepper, chopped
  • 3 cloves garlic, minced

Liquid Ingredients

  • 6 cups vegetable broth Can substitute with chicken broth.
  • 1 can diced tomatoes Includes juice for added flavor.

Seasonings

  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 teaspoons Italian seasoning

Preparation

  • In a large pot, heat some olive oil over medium heat. Add the chopped onion, sliced carrots, chopped celery, bell pepper, and minced garlic. Sauté the vegetables until they become soft and fragrant, about 5-7 minutes.
  • Once your base is ready, add the chopped cabbage to the pot. Stir it well and let it continue cooking for a few more minutes until the cabbage starts to wilt.

Cooking

  • Pour in the vegetable broth and add the can of diced tomatoes (with juice) to the pot. Stir well.
  • Sprinkle in the salt, pepper, and Italian seasoning. Stir until well combined.
  • Bring the soup to a boil, then reduce the heat to low. Allow it to simmer for about 30 minutes.
  • Once the soup has simmered, it’s ready to be served hot. Ladle it into bowls and enjoy.

Notes

This soup is customizable; you can add beans for protein or substitute vegetables based on preference. It can be stored in the fridge for up to 5 days and frozen for up to 3 months. Serve with whole-grain bread or fresh herbs for enhancement.
