Preparation
- Preheat the oven to 350°F and line baking sheets with parchment paper.
- In a stand mixer, cream the softened butter and powdered sugar until light and fluffy.
- Add salt, vanilla, and flour on low speed until combined.
- Stir in the chopped pecans.
- Use a cookie scoop to portion the dough and roll it into balls.
- Place the balls on the baking sheets with space in between.
Baking
- Bake for 8-10 minutes until lightly golden.
- Cool on the baking sheets for 5 minutes, then roll in powdered sugar.
- Transfer to a cooling rack and roll in powdered sugar again when cool.
Notes
These cookies can be served as a sweet snack or dessert. They pair well with hot chocolate, coffee, or tea. To store, keep in an airtight container at room temperature for about a week, or freeze with parchment paper between layers.
