  • 1 cup unsalted butter, softened Make sure your butter is softened to room temperature for easier mixing.
  • ½ cup powdered sugar
  • ¼ teaspoon salt Skip if using salted butter.
  • 1 ½ teaspoons vanilla extract
  • 2 ¼ cups all-purpose flour Can substitute with gluten-free flour.
  • ¾ cup pecans (or walnuts), finely chopped Toasted pecans can enhance flavor.
  • 1 cup powdered sugar (for dusting) For rolling cookies after baking.

Preparation

  • Preheat the oven to 350°F and line baking sheets with parchment paper.
  • In a stand mixer, cream the softened butter and powdered sugar until light and fluffy.
  • Add salt, vanilla, and flour on low speed until combined.
  • Stir in the chopped pecans.
  • Use a cookie scoop to portion the dough and roll it into balls.
  • Place the balls on the baking sheets with space in between.

Baking

  • Bake for 8-10 minutes until lightly golden.
  • Cool on the baking sheets for 5 minutes, then roll in powdered sugar.
  • Transfer to a cooling rack and roll in powdered sugar again when cool.

Notes

These cookies can be served as a sweet snack or dessert. They pair well with hot chocolate, coffee, or tea. To store, keep in an airtight container at room temperature for about a week, or freeze with parchment paper between layers.
