For the Crust

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a saucepan, heat the honey over medium heat until it turns a deep amber color, about 5-8 minutes, then cool slightly.

Mixing the Filling

  • In a bowl, whisk together the heavy cream, whole milk, eggs, sugar, salt, and vanilla extract until fully combined.
  • Slowly whisk in the cooled honey to blend everything together.

Assembling and Baking

  • Pour the honey mixture into the pre-made pie crust.
  • Bake in the preheated oven for about 30-35 minutes until the filling is set but slightly jiggly in the center.

Cooling and Serving

  • Allow the pie to cool completely at room temperature.
  • Once cool, sprinkle a little sea salt on top.

Notes

Keep an eye on the honey as it heats to avoid burning. A slightly jiggly center is normal; it will set as it cools. Avoid over-baking to prevent a tough texture.
