Method
Cooking the Pasta
- Cook the spaghetti according to package directions until al dente. Drain the pasta, but remember to reserve some of the pasta water.
Cooking the Bacon and Garlic
- In a skillet over medium heat, cook the diced bacon until it becomes crispy. Once done, remove the skillet from the heat and add the minced garlic, cooking for just about one minute.
Mixing the Sauce
- In a bowl, whisk together the eggs and grated Parmesan cheese until smooth.
Combining Ingredients
- Add the cooked spaghetti to the skillet with the crispy bacon and garlic. Quickly pour the egg and cheese mixture over the hot pasta, tossing everything together until well combined. If the sauce is too thick, use the reserved pasta water to reach your desired creaminess.
- Season the pasta with salt and pepper to taste.
- Serve immediately, garnished with fresh parsley for a pop of color and flavor.
Notes
To achieve the best texture, cook the spaghetti al dente, as this prevents it from becoming mushy. Be quick when mixing the egg mixture with the pasta to avoid scrambling.
