Ingredients
  

Avocado Toast
  • 2 slices whole grain bread thick-cut
  • 1 ripe avocado
  • ΒΌ tsp lemon juice
  • salt and pepper to taste
Egg Topping
  • 2 large eggs
  • 1 tsp olive oil
  • 1 pinch red pepper flakes optional

Method
 

  1. Toast bread slices until golden and crispy
  2. Scoop avocado flesh into bowl. Mash with lemon juice, salt, and pepper
  3. Heat olive oil in skillet over medium heat. Crack eggs and cook sunny-side-up for 3-4 minutes until whites set
  4. Spread avocado mixture evenly on toast. Top each with cooked egg
  5. Sprinkle with red pepper flakes and extra black pepper. Serve immediately

Notes

Tip: Use slightly firm avocados for best texture. For vegan version, substitute eggs with cherry tomatoes.
