Avocado Toast

whole grain bread

Instructions
Toast bread slices until golden and crispy
Scoop avocado flesh into bowl. Mash with lemon juice, salt, and pepper
Heat olive oil in skillet over medium heat. Crack eggs and cook sunny-side-up for 3-4 minutes until whites set
Spread avocado mixture evenly on toast. Top each with cooked egg
Sprinkle with red pepper flakes and extra black pepper. Serve immediately
