- Toast bread slices until golden and crispy
- Scoop avocado flesh into bowl. Mash with lemon juice, salt, and pepper
- Heat olive oil in skillet over medium heat. Crack eggs and cook sunny-side-up for 3-4 minutes until whites set
- Spread avocado mixture evenly on toast. Top each with cooked egg
- Sprinkle with red pepper flakes and extra black pepper. Serve immediately
Notes
Tip: Use slightly firm avocados for best texture. For vegan version, substitute eggs with cherry tomatoes.
