Ingredients
  

Avocado Toast

  • 2 slices whole grain bread thick-cut
  • 1 ripe avocado
  • ΒΌ tsp lemon juice
  • salt and pepper to taste

Egg Topping

  • 2 large eggs
  • 1 tsp olive oil
  • 1 pinch red pepper flakes optional

Instructions
 

  • Toast bread slices until golden and crispy
  • Scoop avocado flesh into bowl. Mash with lemon juice, salt, and pepper
  • Heat olive oil in skillet over medium heat. Crack eggs and cook sunny-side-up for 3-4 minutes until whites set
  • Spread avocado mixture evenly on toast. Top each with cooked egg
  • Sprinkle with red pepper flakes and extra black pepper. Serve immediately

Notes

Tip: Use slightly firm avocados for best texture. For vegan version, substitute eggs with cherry tomatoes.
