Ingredients
  

Toast Base

  • 1 slice whole grain or sourdough bread (toasted) Toast just before serving to keep it crispy.

Avocado Toppings

  • ½ ripe avocado thinly sliced Use ripe avocados for the best flavor and creaminess.
  • 1 pinch red pepper flakes
  • 1 sprinkle Everything Bagel seasoning or sesame seeds + sea salt

Egg Preparation

  • 1 tbsp milk or cream Can substitute with any plant-based milk.
  • 1 tsp butter or oil

Fruits

  • 5-6 strawberries, halved
  • ¼ cup fresh blueberries

Seasoning

  • Salt & pepper to taste

Preparation of Eggs

  • Whisk the eggs with milk in a bowl.
  • Cook the eggs in a pan over low heat with butter, stirring gently to create a fluffy texture.

Assembly

  • Layer the avocado slices over the toasted bread.
  • Sprinkle red pepper flakes, Everything Bagel seasoning, and a pinch of sea salt over the avocado.
  • Halve the strawberries and serve them alongside the blueberries.
  • Arrange the toast, fluffy eggs, and fruit beautifully on a plate.
  • Optional: Add a squeeze of lemon over the avocado or a drizzle of hot honey for a special touch.

Notes

This dish is best enjoyed fresh. Store cooked eggs in an airtight container in the fridge for up to a day. The sliced avocado should be consumed immediately. Toast the bread fresh for best texture.
