Ingredients
  

Brownie Ingredients
  • 1 ripe avocado mashed until smooth
  • 2 eggs
  • 0.5 cup maple syrup
  • 1 tsp vanilla extract
  • 0.5 cup cocoa powder unsweetened
  • 0.25 cup almond flour
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.33 cup dark chocolate chips plus extra for topping

Method
 

  1. Preheat oven to 350°F (175°C). Grease or line an 8x8-inch baking pan.
  2. In a bowl, mash the avocado until smooth. Whisk in eggs, maple syrup, and vanilla extract until well combined.
  3. Add cocoa powder, almond flour, baking soda, and salt. Mix until just combined.
  4. Fold in chocolate chips, reserving a few to sprinkle on top.
  5. Pour batter into prepared pan and smooth the top. Sprinkle with remaining chocolate chips.
  6. Bake for 22–26 minutes or until a toothpick comes out with moist crumbs. Let cool for at least 15 minutes before slicing.

Notes

To make vegan, replace eggs with flax eggs. For nut-free, use oat flour instead of almond flour. Store in an airtight container for up to 5 days.
