Ingredients
  

For the filling
  • 1 tablespoon butter For cooking the apple mixture
  • 2 pieces apples, peeled and diced Any variety is fine; Granny Smith or Honeycrisp works well
  • 1 tablespoon sugar Can be substituted with honey or maple syrup for a healthier option
  • 1 teaspoon cinnamon To enhance flavor
For the quesadillas
  • 4 pieces flour tortillas Can substitute with corn or whole wheat tortillas
  • 1 cup shredded mozzarella cheese Alternatives include cheddar or cream cheese

Method
 

Preparation
  1. Melt 1 tablespoon of butter in a skillet over medium heat.
  2. Add the diced apples, sugar, and cinnamon. Cook for about 5 to 7 minutes until the apples become soft and caramelized.
Assembly
  1. Lay the flour tortillas flat on a clean surface.
  2. Sprinkle shredded mozzarella cheese on one half of each tortilla.
  3. Spoon the warm apple mixture over the cheese, then fold the tortillas in half to create a half-moon shape.
Cooking
  1. Wipe out the skillet and add a bit more butter if necessary.
  2. Cook the quesadillas on medium heat for about 2 to 3 minutes on each side until golden brown and crispy.
Serving
  1. Let the quesadillas cool slightly before slicing them into wedges.
  2. Serve them warm and enjoy!

Notes

Serve with yogurt or a drizzle of honey. Pairs well with coffee or fresh orange juice.
