Ingredients

For the filling

  • 1 tablespoon butter For cooking the apple mixture
  • 2 pieces apples, peeled and diced Any variety is fine; Granny Smith or Honeycrisp works well
  • 1 tablespoon sugar Can be substituted with honey or maple syrup for a healthier option
  • 1 teaspoon cinnamon To enhance flavor

For the quesadillas

  • 4 pieces flour tortillas Can substitute with corn or whole wheat tortillas
  • 1 cup shredded mozzarella cheese Alternatives include cheddar or cream cheese

Instructions

Preparation

  • Melt 1 tablespoon of butter in a skillet over medium heat.
  • Add the diced apples, sugar, and cinnamon. Cook for about 5 to 7 minutes until the apples become soft and caramelized.

Assembly

  • Lay the flour tortillas flat on a clean surface.
  • Sprinkle shredded mozzarella cheese on one half of each tortilla.
  • Spoon the warm apple mixture over the cheese, then fold the tortillas in half to create a half-moon shape.

Cooking

  • Wipe out the skillet and add a bit more butter if necessary.
  • Cook the quesadillas on medium heat for about 2 to 3 minutes on each side until golden brown and crispy.

Serving

  • Let the quesadillas cool slightly before slicing them into wedges.
  • Serve them warm and enjoy!

Notes

Serve with yogurt or a drizzle of honey. Pairs well with coffee or fresh orange juice.
