  • 2 eggs 2 eggs Can substitute with applesauce or a flax egg.
  • 1 teaspoon 1 teaspoon baking powder
  • 1 teaspoon 1 teaspoon vanilla extract
  • 1/2 teaspoon 1/2 teaspoon cinnamon Enhances flavor of the cake.
  • 1 pinch Pinch of salt Balances sweetness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a cake pan so the cake does not stick.
  2. Peel and chop the apples into small pieces.
  3. In a bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla.
  5. In a separate bowl, mix the flour, baking powder, cinnamon, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fold in the chopped apples.
  8. Pour the batter into the prepared cake pan and spread it evenly.
  9. Bake for 25–30 minutes or until a toothpick inserted into the center comes out clean.
  10. Let the cake cool before serving.

For a variation, try apple cinnamon swirl or fold in nuts for extra texture.
