  • 1 medium onion, chopped
  • 1 cup mushrooms, sliced
  • 1 can cream of mushroom soup Can use cream of chicken soup as a substitute.
  • 1 cup beef broth
  • 2 cups frozen mixed vegetables Feel free to substitute with fresh vegetables.
  • Salt and pepper to taste
  • 2 cups mashed potatoes Store-bought or cauliflower mash can be used.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is browned. Drain excess fat.
  • Stir in the sliced mushrooms, cream of mushroom soup, beef broth, frozen mixed vegetables, and season with salt and pepper. Mix well.
  • Transfer the beef and vegetable mixture into a baking dish, spreading it evenly.
  • Top with the mashed potatoes, smoothing with a spoon to cover the mixture completely.

Baking

  • Place the baking dish in the preheated oven and bake for 30-35 minutes until the top is slightly golden.

Serving

  • Remove from oven and let cool slightly before serving hot.

Notes

Serve with a simple side salad or warm bread. You can sprinkle fresh herbs or cheese on top for extra flavor.
