Plan two prep sessions: Prepare Days 1 through 3 during the first cooking session. Around Day 3 or 4, prepare Days 4 through 7. Keep fresh toppings and avocado separate until serving.
Day 1 – Lemon Garlic Chicken: Toss the broccoli and bell peppers with part of the olive oil. Rub the remaining oil, minced garlic, and lemon juice over the chicken. Roast with the vegetables until tender and cook the chicken until the thickest part reaches 165°F (74°C). Cool, slice, and pack.
Day 2 – Turkey Meatballs: Mix the ground turkey with garlic powder and Italian seasoning. Form into small, evenly sized meatballs and bake or pan-cook until the centers reach 165°F (74°C). Cook the zucchini in part of the olive oil. Sauté the cauliflower rice separately and allow excess steam to escape before packing.
Day 3 – Garlic Steak: Roast the halved Brussels sprouts until browned at the edges. Stir the butter, garlic powder, and chives into the warm mashed potatoes. Cook the steak to your preferred doneness while following safe-temperature guidance. For a whole beef steak, cook to at least 145°F (63°C) followed by a 3-minute rest. Store the steak unsliced when possible.
Day 4 – Garlic Shrimp: Sauté the green beans until crisp-tender. Add the shrimp, garlic, and olive oil and cook until the shrimp are firm, pearly, and opaque. Finish with lime juice. Cool before packing. Keep the avocado whole and slice it immediately before serving.
Day 5 – Chicken Sausage and Vegetables: Slice the pork-free chicken sausage and toss it with the broccoli, bell peppers, onion, olive oil, and Italian seasoning. If using fully cooked sausage, heat according to the package directions. If using raw poultry sausage, cook it to 165°F (74°C).
Day 6 – Caprese Chicken: Cook the chicken breast in the olive oil until it reaches 165°F (74°C). Cool and refrigerate it. Pack the cherry tomatoes, mozzarella, pesto, and fresh basil separately and add them after reheating the chicken.
Day 7 – Lemon Salmon: Arrange the salmon, asparagus, and cauliflower on a sheet pan. Brush with olive oil, season with garlic powder, and place the lemon slices over the salmon. Roast until the vegetables are tender and the salmon reaches 145°F (63°C) in the center.
Divide cooked foods into shallow meal prep containers and refrigerate within 2 hours of cooking. Keep the refrigerator at 40°F (4°C) or below.
Use refrigerated cooked meals within 3 to 4 days. Freeze suitable portions if they will not be eaten within that window, and thaw frozen meals in the refrigerator rather than on the counter.
Reheat cooked meal-prep foods to 165°F (74°C). Keep avocado, basil, pesto, tomatoes, and mozzarella cold and add them after reheating.
