- 4 cups low-sodium chicken broth Use vegetable broth for a vegetarian option.
- 2 medium potatoes, diced Yukon Gold or Russet potatoes work well.
- 2 cups kale, chopped Remove the tough stems before chopping.
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tsp red pepper flakes Adjust to taste for spice level.
Instructions
Preparation
- In a large pot, cook the turkey sausage over medium heat until browned.
- Add the chopped onion and garlic, sauté until the onion is translucent.
Cooking
- Pour in the chicken broth and add the diced potatoes.
